If you are wondering what curds are: curds are what cheese looks like before its pressed & aged. Because it's so fresh, you can expect the enzymes to still be very active (and could even help your digestive system.)  

Beside being very tasty, it also has a “squeaky” texture that makes it fun to eat too. What can you do with it? Fry it, melt it, marinate it, or throw it in a soup or salad.

The mild flavor of this cheese is great with fruit and crackers, in enchiladas, or melted over apple pie. “Apple pie without cheese is a kiss without a squeeze.” It’s yummy with a Merlot, Cab Sauv, or Sauvignon Blanc, and stout or lager beers.

Our White Cheddar is aged for a great medium taste and creamy texture. This cheese is perfect for a cheese platter, to snack on, or simply for sandwiches.

Try pairing it with a Cabernet Sauvignon. Great beer pairings include IPA, Stout, and amber ales.

We carefully heat the milk for this cheese to preserve the CLA, and omega 3 & 6 balance while creating the complex flavor profile and creamy thickness of this scrumptious cheese. Use it to make oozilicious spinach turnovers, super stuffed jalapeños, or top with fig jam for a delightful dessert. It pairs well with Claret, Zinfandel, and Tempranillo as well as IPA beers.
